A Sustainable Restaurant Built for Disassembly

Restaurant Rummel is a 5,382-square-foot timber building located in Stockholm. It is part of Humlegården’s Norra Station project, aimed at revitalizing the surrounding area. The building gradually rises in height, starting lower near the historic Vasastaden district and ascending toward the side facing Norra Tornen.

Exterior

The building’s irregular shape plays with different perspectives, changing angles and heights. The structure is made up of glulam frames and clad in burnt wood. The dark color of the exterior contrasts with the interior’s light wood.

The design takes inspiration from the difference in heights from the surrounding buildings. Thus, a sloping form was chosen, tapering from a height of almost 33 feet on one end to 13 feet on the other.

Interior

MILLIMETER Arkitekter designed the interior for Restaurant Rummel. The aim was to create a welcoming, pleasant and inclusive restaurant environment. This was accomplished with the clever use of materials, with dark stained oak and red marble being the primary materials. Green leather, pink velved and brass details can also be found in the space. While these have a classic aesthetic, the furniture chosen for the restaurant is more modern.

Sustainability

A key idea was to incorporate disassembly, making it possible to use the building components in a flexible way and lengthen their durability. By accepting the impermanent nature of materials, this design encourages the recycling of materials and provides them with a second life afterwards. It also plays a critical role in challenging the traditional linear economic practices prevalent in the construction sector.

“Disassembly is part of the design language of Rummel. The way in which the parts are mounted and bolted together is visible, making it easy to understand how the building is constructed. This also makes it easy to dismantle so that parts can easily be inspected, removed, or replaced, when necessary, without cutting through the cladding.”
